  In exchange for letting my girlfriend and I stay at their place for free on the big island, our friends only requested that I make an authentic Mexican dinner for them. I was worried about finding ingredients since mainstream grocery stores had limited variety in. So, on our way shopping I figured I would try and google a mexican grocery store in Hilo. I was pleasantly surprised to find Mi Tierra Mexicana listed. I went there immediately and was thrilled to find such good variety and basics in this store. My limited options for dinner recipes suddenly turned into a plethora. The owner of the store was also very friendly and helped me with ideas of what to make. We also talked about Mexico. In the end, I bought some masa and prensa to make homemade tortillas, some pre-made sopes, some mole to make enmoladas, tomatillos for salsa, queso blanco for topping, tequila for drinking, and pan dulce with some chocolate abuelita for desert. The dinner was a hit and my friends, who work as chefs at a resort, ate their fill and took note of the dishes for future ideas for their work. I didn't ask the owner her name, but I am very thankful to her for her help and friendliness.
